Boatyard Distillery Ltd is an award winning farm-to-bottle distillery located in Northern Ireland on the shores of Lough Erne in Co. Fermanagh. The first working distillery in Enniskillen since 1887, it takes its name from a former boatyard that has been converted into a craft distillery overlooking Lough Erne in Northern Ireland’s Lakelands. Only the best organic ingredients have been chosen for each of their products with the terroir of the land at the forefront of each spirit.
The director and founder, Joe McGirr, has years of extensive experience in the spirits industry across London and Scotland. He was brought up on a farm outside Enniskillen and he had always loved the idea of using his knowledge and experience to start a distillery in the area he was raised. Farming is in Joe’s blood – his grandad Brian was a ploughing contractor and his father Michael was a beef and dairy farmer. Now his cows eat the spent grain from the spirits which have already notched up a clutch of awards. They use only the best organic ingredients to makes sure the terroir of the land is at the forefront of each blend.
For their Boatyard Double Gin, organically produced wheat spirit is macerated for 18 hours with 8 different botanicals. Boatyard Gin is the essence of Fermanagh and Joe wanted to bring something from home into the spirit, hence it is brought to life with earthy tones from the family farm foraged botanical, Sweet Gale. The whole family get involved in foraging fresh sweet gale for Boatyard Gin, yet another way in which this gin is truly a labour of love.
They use the peel from unwaxed lemons to add a citrusy kick, supplied by McDaid’s Fruit and Veg, which they peel on the day they are to be used for ultimate freshness.
As the Double Gin spirit runs off the still they introduce a unique juniper filtration process which Dutch gin spirit distillers call ‘dubbel gebeide genever’. This double contact method results in an even more pronounced juniper flavour. The collected spirit has pure water added to it before resting for a minimum of 2 weeks before they bottle and label.
Boatyard Old Tom Gin is the first of its kind to be launched in Ireland. It is made using their own Boatyard Double gin, which they rest for a minimum of 4 months drawing flavour and colour from the cask, we then add Fermanagh honey for natural sweetness, imitating our18th Century predecessors. Our Old Tom has notes of candied lemon peel, vanilla and cinnamon spice, with a silky orange finish. Slightly sweeter than London Dry but drier than Dutch genever it is sometimes referred to as ‘the missing link’.
Boatyard Vodka is the first seed-to-sip vodka in Ireland. Made using organic Irish wheat grown in Co. Kildare, each bottle can be traced back to the farm and field it came from. Malted Irish wheat is steeped in hot water to produce a sugary liquid, ‘wort’. Once cooled, we add champagne yeast and leave it to ferment for seven days. The resulting alcoholic liquid, the ‘wash’, is then distilled three times in our 500 litre ‘Mr Fusion’ still to 96% ABV. Finally, reverse osmosis water is added to the high-strength alcohol to bring it down to a smooth 41% ABV. This approach gives our small batch, Irish vodka a unique and complex flavour. Boatyard vodka has a creamy smooth character, exuding notes of black pepper, orange zest and beeswax with a subtle vanilla sweetness.
