Potato and Bacon Gratin

  • 4 large potatoes – slice 1 cm thick
  • 1/4 packet frozen finely chopped onion, celery, carrot mix
  • 1 pk diced bacon bits
  • 1 chicken stock pot mixed with 100mls boiling water
  • 4 tablespoon single cream
  • 50g grated cheese

Main Instructions
  1. Fry chopped vegetables and bacon
  2. Boil potato slices 10 mins in salted water until just cooked
  3. Mix in cooked potato slices to bacon mix. Sprinkle with grated cheese
  4. Mix stock and cream. Pour over potatoes. Season to taste. Sprinkle with chopped parsley/coriander.
