Basic Pancake Batter

125g Plain Flour, sifted

Pinch Salt

2 Large Eggs

275ml Milk

50g Butter
Sift the flour into a bowl with the pinch of saltMake a well in the centre of the flourWhisk the eggs and milk together with a fork and pour into the wellMix really well until you get a smooth batterMelt half of the butter and stir into mixtureLeave to rest for 10 minutes Heat a frying pan over a high heat and add a small knob of butterOnce butter is melted, add just enough batter to coat the base of the pan. Swirl the pan to ensure an even covering.Cook batter on one side until bubbles appear on the surfaceFlip pancake over and cook for approx 30 secs until underside is goldenTransfer to a plate to keep warm until all your pancakes are ready.

American Style Pancakes

300g Plain Flour

2 teaspoons Baking Powder

100g Caster Sugar

2 Large Eggs

250ml Milk

80g Butter
Sift together the dry ingredients in a bowlIn a separate bowl whisk together the eggs and milk using a fork. Gradually add the egg and milk mixture to the dry mixture and stir well until it forms a smooth (but still thick) batter. Melt half the butter and stir into the mixture. Stand for 10 mins. Heat a frying pan over a high heat and add a small knob of butter. Once butter is melted, add about two tablespoons of batter for each pancake to the pan. Make sure butter isn’t burning as it will ruin flavour. Cook batter on one side until bubbles appear on the surface. Flip pancake over and cook until underside is golden. Transfer to a plate to keep warm until all your pancakes are ready.

Blueberries and Maple Syrup

Basic American Pancake batter

1 punnet fresh Blueberries

Maple Syrup
When batter is cooking, add a handful of blueberries on each pancake. Once bubbles appear, flip the pancake over so the blueberries become part of the pancake. Once pancake is cooked, transfer to a plate and pour over Maple syrup and more fresh blueberries.

Forest Fruits and Sugar

Basic American Pancake Batter

1 450g pot Frozen Forest Fruits

3 tablespoons Caster Sugar

1 tablesp Icing sugar to serve
In a saucepan, place the punnet of Frozen Fruits and cover with the caster sugar. Cook on a medium heat, stirring occasionally until the fruit is softened. Leave to cool. Cook Pancakes as directed. Top with the Fruit mixture and sprinkle over sifted Icing Sugar.

Bacon, Banana and Maple Syrup..Ultimate American Treat!

Basic American Pancake Batter

Rashers of Bacon

Grilled or fried Fresh Banana Sliced

Maple Syrup
Cook Pancakes as directed. Top with Bacon rashers then Banana and then pour over the Maple Syrup.Alternatively, Banana can be added to the batter in same way as Blueberry pancakes

Ham and Cheese
Basic Pancake BatterSliced Ham, cut into piecesGrated Cheddar Cheese
Cook Pancakes as directedPlace pieces of ham and handful of the grated cheese in a line inthe middle of the Pancake and roll up.For an extra treat- top the rolled pancakes with some extra cheese and place until a hot grill until cheese is melted and bubbling hot
Stewed Apple with Cinnamon and Whipped Cream
Basic Pancake Batter1 cooking or eating Apple½ teasp of Cinnamon or a Cinnamon stick1 tablespoon Caster SugarSmall pot of Whipping Cream
Cook Pancakes as directedPeel and core Apple and cut into small chunksPlace Apple in a small saucepan with the pinch of cinnamon or cinnamon stick and the caster sugar. Cook over a medium heat until apple is stewedWhip the cream in a bowlPlace some of the cooked apple mixture on top of pancake and roll up. Top with generous spoonful of whipped cream. Sprinkle a little extra cinnamon on top.

Smoked Salmon, Herbs and Cream Cheese
Basic Pancake BatterSliced Smoked SalmonCream CheeseHandful fresh herbs- Chives, Parsley or DillWedge of Lemon (optional)Black Pepper
Cook Pancakes and directedMix the Cream Cheese with a small handful of your chosen herbs.Spread cream cheese mix on one side of the pancake and top with a slice of Smoked Salmon, a squeeze of lemon (If using) and some Black Pepper.Roll up the Pancake
