Strawberry Crumble

The Filling
  • 500g local strawberries
  • 50g Caster sugar
  • 25g ground almonds
  • 4 tsp vanilla extract
The Topping
  • 110g Neil's plain flour
  • 1tsp baking powder
  • 75g cold abernethy butter, diced
  • 100g flaked almonds
  • 75g demerara sugar

Main Instructions
  1. Hull the strawberries
  2. Mix together with the rest of the ingredients
  3. Add to a suitably sized dish
The Topping Instructions
  1. Mix flour and baking powder in a bowl and rub in the diced butter with fingers
  2. Stir in flake almonds and sugar with a fork
  3. Pour over the top of the strawberry mix
  4. Bake in the oven for 30 minutes until topping is golden
