Spicy Salmon marinated with Whiskey

This Spicy Salmon marinated with Whiskey recipe was provided by Celebrity Chef Romy Gill for Bushmills Salmon and Whiskey Festival 2016.

Serve with Fennel & Melon Salad

Spicy Salmon marinated with whiskey
  • Whole Salmon
  • 2 Red Onions Sliced
  • 1 tsp of ginger paste
  • 2tsp garlic paste
  • 3 Rapeseed oil
  • 2 tsp 5 spice mix
  • 3 tsp pomegranate molasses
  • 1tsp honey
  • 1 tsp red chilli flakes
  • 25ml whiskey
  • Salt to taste

Main Instructions
  1. Marinate the fish with all the ingredients except onions and honey (keep aside)
  2. Cook the marinated fish on a high heat for 15 -20 minutes
  3. On a hob caramelise the onions with honey, once ready, keep aside
  4. Once the fish is cooked decorate the top of the fish witk caramelised onions and serve with fennel and melon salad.
