Shepherds Pie

Main Ingredients
  • 1lb lamb mince
  • 2 tablesp rapeseed oil
  • 1 onion chopped
  • 4 ripe tomatoes, diced
  • 1 carrot diced
  • 2 sticks celery diced
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 1 sprig picked thyme
  • 200ml beef or chicken stock
  • salt and pepper
  • 4 large potatoes, boiled and mashed using 100ml skimmed milk
  • 20z butter
  • salt and pepper

Main Instructions
  1. Heat the oil in frying pan add in the lamb mince and cook until brown, drain off fat and leave lamb to side. In same pan fry off onion, carrot, celery garlic and once browned add in bay leaf, thyme and cook for 5 minutes. Add in mince, tomatoes and stock and cook for 20 minutes and liquid reduced.
  2. For the topping peel and quarter your potatoes and boil until soft, remove liquid and place potatoes back in pot on heat, mash potato add in butter, then milk and continue to mash until smooth. Season with salt and pepper.
  3. Place oven on at 200 deg and in an oven proof dish add in the mince and top with mashed potato, cook in oven for 20 minutes until golden brown.
