Quick and Easy Meatballs with Tomato Sauce

This recipe comes from Evelyn McBurney who demonstrated the dish at Orangefest 2014

Servings 4
  • 1 lb mince
  • 1 clove of garlic (crushed)
  • 1tbsp tomato puree
  • Dash Worcester Sauce
  • 1 egg
Tomato Sauce
  • 1 onion chopped finely
  • 1 clove garlic (crushed)
  • 2 tins of chopped tomatoes
  • 1 stock cube
  • 2 bay leaves
  • 25g Cheese (Can be Parmesan, cheddar or sliced ball of mozzarella)

Main Instructions
  1. Mix the ingredients together until evenly mixed (best to use your hands..!)
  2. Roll into small balls. This mix usually makes around 20
  3. Brown meatballs in a hot pan with a little oil, turning frequently
  4. Push meatballs out round the side of the pan
Tomato Sauce Instructions
  1. Add the onion and garlic into the middle of the pan of meatballs and fry until the onion has softened
  2. Add the tinned tomatoes along with the stock cube and bay leaves, stir the meatballs into the sauce.
  3. Place the lid on the pan and simmer for 15 minutes until the meatballs are cooked through
  4. Scatter over the grated cheese or slices of mozzarella and grill until cheese is melted and golden on top
