Puff Pastry Christmas Swirls

This recipe was provided by Mollie Cunningham and was demonstrated at the Belfast Christmas Market to promote buying local produce.

Puff Pastry Christmas Swirls
  • 1 roll of puff pastry
  • 2 packets of Cookstown bacon (chopped)
  • 6 tbsp tomato pesto – Tom&Ollie
  • a generous amount of grated Dromona mature cheddar
  • 1 egg – Springmount Farm
  • Harnotts basil infused rapeseed oil

Main Instructions
  1. Preheat the oven to 180 º C
  2. Heat the rapeseed oil in a frying pan and add the chopped Cookstown bacon and allow it to crisp up slowly.
  3. Roll out the puff pastry and spread a generous amount of tomato pesto all over the pastry sheet, then sprinkle the cooked bacon and cheese on top.
  4. Roll the pastry into and a cylinder and cut the cylinder into rings.
  5. Lightly whisk one egg and glaze the rings with egg.
  6. Place the rings onto a baking sheet and bake in the oven for 10 - 15 minutes
