Potatoes cooked with kale

This  recipe was provided by Celebrity Chef Romy Gill for Bushmills Salmon and Whiskey Festival 2016.

Potatoes cooked with kale
  • 4 Potatoes boiled
  • 75g of kale chopped and blanched
  • 1 garlic chopped
  • 1tsp crushed black pepper
  • 20g butter
  • 40ml cream
  • 40g cheese
  • 1tsp cumin
  • Salt

Main Instructions
  1. Heat the pan on a medium heat, add butter and add 1tsp cumin and chopped garlic
  2. Once garlic is light brown add kale and cook for 2-3 minutes
  3. In a bowl mash the cooked potatoes add pepper, salt grate the cheese, cream along with the cooked kale and mix well and lay the mash evenly on a baking tray.
  4. Just before serving heat the oven on 200 and put the tray in the oven to cook for 10min so the mash is full of flavours and the cheese spreads evenly and it tastes really good with the fish.
