Potato & Chocolate Fudge cake

Main Ingredients
  • 200g Mashed Potatoes
  • 4 tablespoons of Cream
  • 125g butter
  • 350g Caster Sugar
  • 100g Dark Chocolate
  • 2 tablespoon Cocoa Powder
  • 1 ½ teaspoon Baking Soda
  • 4 tablespoon Hot Water
  • 5 Egg Yolks
  • 200g Plain Flour
  • 2 teaspoon Baking Powder
  • 5 Egg Whites
  • Topping
  • 250g Dark Chocolate
  • 185ml Whipping Cream

Main Instructions
  1. In a large heatproof bowl add Mashed Potatoes, Butter, Cream, Dark Chocolate, Caster sugar & Cocoa powder
  2. Place bowl onto a pot of boiling water, leave for 5-10 minutes to melt together
  3. When ingredients are melted using a wooden spoon Mix & Combine together
  4. Remove from heat and beat in Egg Yolks
  5. Add Baking Soda to hot water, then whisk into chocolate cake batter
  6. Fold Flour into cake batter
  7. Using Electric Mixer whisk the Egg Whites then carefully fold into cake batter in 3 stages
  8. Pour onto a baking tray or cake tin lined with Parchment Paper
  9. Bake in oven for 45-50mins @160oc
  10. While cake is baking make the topping by breaking up Dark Chocolate into smaller pieces, place in a medium sized bowl.
  11. Boil cream and pour onto broken Chocolate pieces, whisk well to combine & melt chocolate, creating a smooth glossy ganache topping. Set to side until required
  12. Remove Fudge Cake from oven leave to cool on the tray to keep shape
  13. Peel paper from bottom of the fudge cake, turn right-side up coat with Chocolate Ganache topping
  14. Leave to set, cut into portions & enjoy as is or served warm with your favourite ice-cream
