Grilled Mackerel, Discovery apple slaw, charred parsley and horseradish dressing

Apple Slaw
  • 4 Mackerel Fillets
  • 2 Discovery apples, coarsely grated
  • Juice 1 lemon
  • 1 red onion, peeled and finely sliced
  • 50ml sour cream
  • 1 teaspoon wholegrain mustard
Charred parsley
  • Bunch parsley
  • 1 tablespoon oil
  • 2 teaspoons cider vinegar
  • 1 clove garlic, minced
Horseradish Dressing
  • 1 tablespoon good quality horseradish sauce
  • 4 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • Freshly ground black pepper

Main Instructions
  1. Fry off Mackerel fillets
  2. Mix together slaw ingredients
Charred parsley Instructions
  1. Mix the parsley with the oil, vinegar and garlic
  2. Leave for 10 minutes then cook on a hot grill or bbq to scorch.
Horseradish Dressing Instructions
  1. Whisk together
