Glenarm Shorthorn Rib Eye Steak Sandwich with Bushmills Jus

This recipe will be demonstrated on our Signature Dish Kitchen in the Fine Food Marquee at the Dalriada Festival on the 18th of June 2011

Main Ingredients
  • 6oz Glenarm Rib eye steak
  • 1 Yellow door ciabatta
  • 1 onion (sliced)
  • 1 bag of Rocket (local) dressed
  • Bushmills/sauce
  • Cream
  • Jus
  • 1 tps olive oil
  • Salt and Pepper
  • 500ml of olive oil
  • 1 tbls wholegrain mustard
  • 1/2 cup white wine vinegar
  • 1 knob of butter

Main Instructions
  1. Heat olive oil in a pan, add sliced onions on a medium heat and then add butter
  2. Heat another pan, slice ciabatta and toast both sides
  3. Wash rocket, drain and dry, leave in a bowl
  4. For the Dressing:
  5. Add mustard and white wine vinegar and whisk in the olive oil slowly until the mix emulsifies (thickens) leave to stand
  6. Add seasoned steak to the pan cook until desired
  7. 1 minute for rare, 2 and half min for medium-rare, 4 minutes for medium, 6 minutes for medium-well and 8 minutes for well done
  8. Leave to rest
  9. Add Bushmills to the pan( stand back)
  10. This is were we show off Flambe, let the alcohol cook off, add cream and jus and let reduce while you build your plate
