Mackerel with Comber Early potatoes and Anchovy and Caper brown butter

For the Anchovy and Caper Brown Butter
  • 100g unsalted Abernethy Butter
  • 7-8 anchovy fillets in olive oil
  • 1 clove of garlic crushed
  • Juice of ½ lemon, or more to taste
  • 2-3 tbsp small drained capers
  • Salt and black pepper
  • Chopped parsley
  • Lemon wedges to serve
For the Mackerel and Comber Earlies
  • 2 fillets of Mackerel
  • 2 handfuls of trimmed samphire
  • 250g cleaned Comber Earlies
  • 2 bay leaves
  • Chopped parsley

Main Instructions
  1. Heat the butter until melted in a small saucepan, continue gently heating until brown flecks form on the bottom
  2. Remove the butter from the heat and stir in the anchovies until they dissolve, add the garlic and a good squeeze of lemon then stir in the capers. Taste and season accordingly. Cover and keep warm.
  3. Lightly crush the cooked potatoes with a fork and stir in half the anchovy butter
For the Mackerel and Comber Earlies Instructions
  1. Bring a large pan of water to the boil, add the samphire and cook for 2 minutes, remove with slotted spoon and place in cold water to cool
  2. Salt the water in the pan, add the potatoes and bay leaves and simmer for 15-20 minutes until the potatoes are tender in the centre
  3. Drain when cooked, cover and keep warm
  4. Heat remaining 1tbsp of oil in a large frying pan, dab the skin of the fillets dry with kitchen paper
  5. Season fish on both sides, lay on the pan skin side down, cook for 3-4 minutes until the skin is crisp
  6. Turn over and cook for another 1-2 minutes and remove from heat
  7. Divide the potatoes between 2 plates, scatter with samphire, lay the fish on top and spoon on the remaining butter.
  8. Scatter with chopped parsley and serve with a lemon wedge
