Fresh papparadelle pasta with Peter Hannan’s guanciale, wild garlic pesto and porcini mushrooms

This recipe is from Paula Mc Intyre, who demonstrated how to create a variety of unusual dishes from common home grown produce and plants at the Garden Gourmet Pavilion at Northern Ireland’s premier gardening event, Garden Show Ireland.

Fresh Pasta Dough
  • 200g “00” flour
  • 4 free range egg yolks
  • pinch salt
  • 1 teaspoon Broighter gold rapeseed oil
  • cold water to bind
Wild garlic pesto
  • handful washed wild garlic leaves
  • handful chopped parsley
  • 50g chopped hazelnuts
  • 50g parmesan, grated
  • 50ml Broighter gold rapeseed oil
  • salt and fresh pepper
3rd Ingredients
  • 6 dried porcini mushrooms, soaked in boiling water to rehydrate
  • 4 rashers Peter Hannan's guanciale, chopped
  • 1 onion, finely chopped
  • 1 tablespoon broighter gold rapeseed oil
  • 25g butter
  • 75ml double cream
  • 50g parmesan

Main Instructions
  1. Place the flour in a bowl and mix in the salt.
  2. Add the egg yolks and oil and enough water to make a dough.Mix well and knead lightly.
  3. Wrap in cling and rest for 20 minutes in the fridge.
  4. Roll as shown and cut into thick strips. Allow to dry.
Wild garlic pesto Instructions
  1. Blend together.

  1. Fry the guanciale in a dry pan until crispy.
  2. Remove from pan and fry the onion in the oil.
  3. Drain the mushrooms, keep the juice and chop them.
  4. Add to the pan with the butter.
  5. Add some of the mushroom juice and cook for a minute.
  6. Add the pesto, cooked guanciale and cream.
  7. Boil the pasta and add to the pan.
  8. Toss well.
  9. Place in a bowl and scatter over the parmesan.
