Fennel, Chilli and Melon Salad

Fennel, Chilli and Melon Salad
  • 2 large bulbs thinly sliced
  • Juice of 1 lime
  • 1 red chilli deseeded and finely chopped
  • Half melon peeled and diced into small chunks
  • 2tsp fennel leaves
  • 4tbsp olive oil
  • Salt to taste

Main Instructions
  1. In a large bowl mix all the ingredients and keep it in the fridge before serving
  2. This is such a delicious and simple salad the sweetness of the melon and chilli just works wonders with the fennel.
