Comber Earlies, Roast Garlic & Rosemary

Main Ingredients
  • 12 Comber Earlies (equal in size)
  • 2 Cloves of sliced Garlic
  • 4 Sprigs of Rosemary
  • Salt & Pepper
  • Sea salt flakes
  • Butter
  • Olive Oil

Main Instructions
  1. Scrub & Wash Comber Earlies
  2. Boil in a pot of salted water for 20-25 mins or until tender
  3. Drain Potatoes, keep warm
  4. Place pan on a medium – high heat, add good sized knob of Butter drizzle with Olive Oil, sprigs of Rosemary & sliced Garlic cloves sauté for 1 minute
  5. Add Comber Potatoes to pan coat with Butter mix, keep on heat for 4-5 minutes to roast , crisping skin taking care to keep rolling potatoes in the pan as not to burn one side
  6. Sprinkle with sea salt flakes & serve.
