Breaded Beef Steak with Spicy Cauliflower & Chickpeas

TV chef Brian Turner of BBC ‘Ready Steady Cook’ fame will be winging his way to ‘Destination Delicious’ for a special guest appearance at Derry City and Strabane District Council’s award-winning LegenDerry Food Festival which will have the banks of the Foyle sizzling.

Brian is due to be at the LegenDerry Food Festival on Saturday 18th March and will do a rolling demo starting at 2pm and running until 4pm.

Main Ingredients
  • 2 Breslin Butcher sirloin steaks
  • 2 Cavanagh Great Taste Award winning eggs
  • Pinch chilli powder
  • 2tbsp flour
  • 4tbsp flour
  • 1tsp garlic powder
  • 1tsp paprika
  • Pinch cumin
  • Pinch cinnamon
  • 1tbsp chopped parsley
  • Salt & pepper
  • 1tbsp Broighter Gold Rapeseed oil
  • 2oz Donnybrewer butter
  • 400gr tinned chick peas
  • 2tbsp Broighter Gold Rapeseed oil
  • 2 finely chopped onions
  • 2 cloves garlic, crushed
  • 4 tomatoes, deseeded & chopped
  • 1 small cauliflower in small fleurettes
  • 2tbsp mild curry powder
  • ½ tsp turmeric
  • Pinch chilli flakes
  • 2tbsp horseradish sauce
  • 2tbsp chopped parsley
  • Salt & pepper

Main Instructions
  1. Beat the steaks flat and trim off the fat
  2. Cut in two to have 4 steaks
  3. Beat 2 eggs with chilli powder
  4. Mix 4tbsp flour with garlic powder, paprika, cumin, cinnamon and chopped parsley in a bowl and season with salt & pepper
  5. Heat the oil in a frying pan
  6. Dip steaks into 2tbsp flour and shake off excess
  7. Dip into the beaten eggs, shake off excess then dip into spice mix
  8. Repeat this process and shake off excess and tap the steaks to keep the mix on the steaks
  9. Put into oil in frying pan and add butter
  10. Cook 1 ½ minutes on each side to colour and crisp up
  11. Take out and drain on kitchen paper and keep warm
  12. Meanwhile put tinned chick peas to drain
  13. Heat rapeseed oil then add onions and garlic, cauliflower and cook for 5 minutes, do not colour, but allow to gently soften
  14. Add diced tomatoes, curry powder, turmeric and chilli flakes and cook together until cooked but do not colour too much
  15. Add horseradish sauce and chick peas and simmer for 5 minutes
  16. Take half of the mix, blend until smooth then put back into the pan
  17. Add parsley and season
  18. Put onto middle of the plate
  19. Reheat the steaks if necessary, slice and lay on cauliflower mix to serve
