Oliver’s Scones

This is a recipe from Olivers Coffee Bar who will be showcasing local food on the Taste of Ulster TV Kitchen at The Balmoral Show 2015

“We were delighted to win the Best Cold Breakfast Award for our scones in Januray 2015 as part of the Shake Up Your Wake Up Breakfast Week awards. The UK wide award meant a great deal to everyone at Oliver’s as we put a lot of time into recipe testing and tasting before we opened and since opening we take great pride baking our scones every morning. It’s lovely to receive recognition for the teams hard work and effort. And we are just to pleased that our customers enjoy them as much as we hoped they would :)”

Main Ingredients
  • Plain four
  • Caster Sugar
  • Baking powder
  • Butter
  • Eggs
  • Buttermilk

Main Instructions
  1. Weigh flour, caster sugar, baking powder and butter into a large bowl
  2. Rub in butter using finger tips until mixture resembles breadcrumbs
  3. Add eggs and buttermilk and mix until thoroughly combined and required consistency is reached
  4. Add any flavouring required
  5. Turn out of bowl onto lightly floured surface, gently bring together and pat down to required thickness
  6. Cut with scone cutter, place onto lined tray and brush with egg glaze
  7. Place in the oven and bake between 15 - 20 minutes
  8. Allow to cool before enjoying with some of Oliver's homemade raspberry jam
