On The Hoof

On The Hoof is the newest addition to The Red Bus Company. Custom built by Rory Chapman using a Second World War Army water tank, their wood-fired smoker is the first of its kind in Ireland. It is mounted to a trailer and the food is served from two trestle tables in front of it.
All of the food is cooked using County Armagh apple wood adding a beautiful sweet, smoky flavour to the food cooked inside. Low and Slow is the style of cooking, with cook times varying from two to fourteen hours depending on the menu.
They get their ingredients as locally as possible from Yellow Door and the Meat Cleaver, both in Portadown, The Rosehip Bakery , Banbridge, J.D Hunters, Markethill, and Kennedy Bacon from Omagh.
They like to tailor their menus for each event, but their specialities include; Slow Cooked Beef Brisket, Smoked Bacon Loins, and Smoked Pork Sausages. They are served in a fresh potato bap or with crushed roast potatoes and seasonal vegetables.
