The Department of Hospitality and Tourism’s Ms Audrey Clements, course director for BSc Hons Culinary Arts Management has been successful in her application for HEIF funding.
Through the Academic Enterprise Initiative Audrey now has the opportunity to invite the province’s leading chefs to conduct a series of Culinary Master Classes – demonstrations and workshops, with students based on the Belfast campus.
With the emphasis on local produce, at the end of the series each student will select their favourite dish and will reconstruct it under competition conditions. Judged by visiting professor, chef Michael Deane, the winning dish and recipe will be promoted on the Taste of Ulster webpage.
The first Master class took place on Tuesday 7th March and to start the series we were delighted to welcome back, former student and acclaimed chef Noel McMeel, Executive Head Chef, Lough Erne Resort.
Other leaders in the culinary field taking part in the Culinary Master Class include Damien Tomelty, Cafe Vaudeville; Alan at 27 Talbot Street; Michael Deane and Simon Toye from Deanes; and former student George McAlpine of the Ramore Restaurant.
