On the third day of Christmas, Food NI gave to me..

A recipe for the Ultimate Christmas Roasties with Wilson’s Potatoes

Roast potatoes are one of the most loved elements to everyone’s Christmas Dinner and Wilson’s Potatoes have perfected them!

Who wouldn’t want a deliciously crisp roastie that’s full of flavour to complement all the trimmings of the most special meal of the year – these truly are The Ultimate Christmas Roasties!

The Ultimate Christmas Roasties


800g Wilson’s Country Garden potatoes

200ml Goose fat

100ml Garlic oil

Salt and Pepper


Peel and cut the potatoes in half.  Place into a saucepan of water; boil and simmer for 5 mins.  Drain well in a colander and tip back into the empty saucepan

Heat the goose fat and garlic oil in a microwave for 5mins.

Pour onto the potatoes, place lid back on the saucepan and shake vigorously.  This will coat the potatoes well and help produce crispier roasties.

Carefully tip the potatoes and oil hot onto a preheated roasting tray, and season.

Roast in a preheated oven for 1 hour, turning occasionally, until crisp and golden.
