The Ultimate Fry!
, ,

Ingredients:
• Irwin’s potato bread
• Irwin’s pancakes
• Irwin’s Soda
• Organic free-range eggs
• Sausages
• Streaky bacon
• Tomatoes
• Mushrooms
• Olive oil
• Knob of butter
• Salt and pepper

Method:
• Stretch, yawn and warm a large non-stick frying pan on the hob and add a splash of olive oil.
• Lay the sausages in the heated pan and begin to brown. Resist the urge to pierce the sausages. Instead, let them cook in their own juices bursting on their own with a satisfying pop.
• Heat the grill. Snip a couple of nicks into the bacon rind to ensure the perfect rasher. Once the grill has warmed, place the bacon under the heat and cook until it begins to crisp.  Turn occasionally.
• For the healthy approach take your soda bread and cut into four thick soldiers. Brush with olive oil and toast in a dry pan until golden. This will ensure the ultimate fried bread both crispy on the outside and soft on the inside. Repeat this process with the pancakes and potato bread.
• Heat the pan and add a small knob of butter and a dash olive oil. Slice the mushrooms and add to the heated pan. Season with crushed sea salt and cracked black pepper to bring out the natural flavour. Or for an added treat, add a splash of truffle oil to truly indulge.
• Now slice the tomatoes in half and brush with olive oil. Season with salt and pepper and begin to fry off. A splash of balsamic vinegar can be added at this point, drawing out the natural sweetness within.
• Now for the perfect poached egg, heat a saucepan of water and add a tablespoon of white wine vinegar to hold the egg together. Stir the water vigorously to create a whirlpool. Crack an egg into the centre and allow to poach for just under three minutes.
• Stack it, eat it and revel in the ultimate guilt-free Ulster fry.
