Ingredients:
100g strawberries
Juice and zest 1 lemon
50g of sugar
1 gelatine leaf
Method:
1. Boil the sugar, lemon zest and juice
2. Add the strawberries and cook for 1 minute
3. Blend and sieve ( drain through muslin for a fine jelly)
4. Soak the gelatine in cold water for 5 minutes, squeeze out and add to the hot liquid
5. Pour into a tray lined with cling and chill. Cut into cubes
