Potatoes with Mustard Seeds and Crispy Dulse

Ingredients

1kg Waxy Potatoes
Oil
Bunch of Scallions peeled and finely chopped
2 tablespoons of Yellow mustard seeds
Small bunch of chopped Dill
25g of Dried Dulse deep fried and drained

Method

Peel and cut potatoes into 2.5 cm /1” cubes and boil in salted water until cooked but still firm, drain and set aside.

In a large frying pan put some oil and add the mustard seeds ,cook until they start popping. Add the scallions and fry for 3 mins.

Turn down the heat and add the potatoes and dill, warm through. Finally add the crispy fried dulse and serve.
