Ingredients: • Northern Irish Eggs • 1kg potatoes • 200g self-raising flour • 4 good pinches of salt • Some cooking oil
Method:
Eggs: • Bring a pot of water to the boil, adding a little salt and vinegar – this keeps the eggs together while cooking • Always stir the water before adding the eggs (only cook one at a time!) • Add the egg and turn down the heat until the water is just gently simmering • Cook in the water for 3 minutes for medium firmness, 2 minutes if you like them runny, and 4 minutes if you like a firmer yolk • Remove and serve with the soldiers
Soldiers: • Wash peel and boil potatoes until soft. Drain and then mash until smooth the sieve in the flour and salt and beat well • Work the mixture lightly with you hand to make a pliable dough, adding a little more flour if it is needed • Roll out the dough until about 10mm thick and cut out square shapes • Cook you potato bread on a lightly oiled pan until golden brown • Butter and enjoy with your poached eggs – or any eggs for that matter!
