Lamb Burgers and Homemade Potato Wedges

Ingredients (serves 4):
• 500g Northern Irish Farm Quality Assured lamb mince
• 1 medium onion, chopped
• 1 clove garlic, chopped or crushed
• 1 tbsp fresh mint, chopped
• 1 tbsp fresh coriander, chopped
• 1 egg, beaten
• Black pepper to taste


Method:
• Combine the mince, onion, garlic, mint and coriander with the egg in a large mixing bowl and season with pepper
• Shape the burger mix into four large or eight small patties, place under the grill on a medium heat and cook for 15 minutes, turning every now and then until browned on each side and cooked through
• You could serve these with some homemade potato wedges –
 o Wash and peel about 8 large potatoes and slice into wedge shapes
 o Grease a baking tray with olive oil and place potatoes on the tray, coating well with the oil
 o Bake in a hot over for 40 minutes or until cooked, tossing them in the oil every 10 to 15 minutes.
