Honey Lamb Chops with Garlic Potatoes

Ingredients:

Lamb Chops:
• 4 x loin lamb chops
• 15g butter
• 4tsp chopped mint
• 3tbsp clear honey
• ½tsp grated lemon rind

Garlic Potatoes:
• 1kg peeled potatoes
• 15g butter
• 2 cloves of garlic, peeled and crushed
• 30g olive oil
• Pinch of salt


Method:

Lamb Chops:
• Dot the chops with half the butter and grill fro 8-10 minutes (until golden brown)
• Turn and cook on the other side for 3-4 minutes
• Combine the mint, honey and lemon rind on the meat and cook for another 5minutes

Garlic Potatoes:
• Cut the potatoes into quarters (if large) or into halves
• Boil potatoes for about 10 minutes
• Mix the garlic and oil together with the salt
• Mix the potatoes well with the oil and bake in an oven proof dish at 180oC for 20-30 minutes
• Serve together
