Ingredients:
• 300g plain dark chocolate • 1 ½ tbsp unsalted butter • 1tbsp brandy • 4 eggs, separated • Cocoa powder, for dusting • White chocolate, for decorating
Method:
• Break the chocolate into small pieces, place in a heatproof bowl and set over a simmering pan of water • Add the butter and melt with the chocolate, stirring until smooth • Remove from the heat and stir in the brandy and leave to cool slightly • Add the egg yolks and beat until smooth • In a separate bowl, whisk the egg whites until stiff peaks have formed, then fold them into the chocolate mixture. • Spoon the mixture into 4 small serving bowls and level the surfaces. • Transfer to the fridge and chill for at least 4 hours until set • When ready to serve, dust with cocoa powder and white chocolate flakes and serve
