Chocolate Chip Cookies

Ingredients:
• 125g soft margarine, plus extra for greasing
• 175g plain flour
• 1tsp baking powder
• 85g muscovado sugar
• 5tbsp caster sugar
• ½ tsp vanilla essence
• 125g dark chocolate chips


Methods:
• Preheat the oven to 190oC and lightly grease two baking trays
• Place all the ingredients in a large mixing bowl and beat until well combined
• Place tablespoonfuls of the mixture onto the baking trays, spacing them well apart to allow for spreading during cooking
• Bake in the preheated oven for 10-12 minutes or until the cookies are golden brown
• Using a palette knife, transfer the cookies to a wire rack to cool completely before serving
