Bread and Butter Pudding

Ingredients (serves 4):
• 8 slices of bread
• 150g sultanas and raisins
• ½ jar of strawberry or raspberry jam
• 200g butter
• 250ml milk
• 2 or 3 eggs
• Sugar to sprinkle on top


Method:
• Coat a suitable baking dish on the bottom and sides with butter
• Take four slices of bread, butter each on both sides and place them in the dish
• Add raisins and sultanas, simply sprinkle them
• Spread the jam over the bread and fruit
• Take the remaining four slices of bread and butter them on both sides.  Place them on top of the raisins and jam and cut them into halves so that you will have smaller pieces
• Put the milk into a mixing bowl and whisk in the eggs.  Pour this cream coloured mixture on top of the bread
• Sprinkle a small amount of sugar and bake in a preheated oven at 180oC for about 45 minutes


Expert Tip: Serve with custard!  Sprinkle a little lemon and orange zest on the top for an extra taste!
