Bircher's Muesli

Ingredients:
• 2 cups porridge oats
• 1 cup apple juice
• 1 cup coarsely grated apple
• 115g natural yoghurt
• Juice 1 lemon
• ½ cup sliced nectarines and peaches
• ½ cup mixed berries
• 2 tbsp honey


Method:
• Place the oats and apple juice in a bowl and soak for 1hr, or overnight
• Add grated apple, yoghurt and lemon juice to the oat mixture and mix well
• Spoon into serving bowls and top with fruit.  Drizzle with honey.
